Some food philosophy...
From Dale Nutt
Dale Nutt have been a Jasper resident since 1993. Born in Edmonton, Ab., Dale developed his culinary craft mostly at Jasper Park Lodge and Fiddle River.
In 2011 he accepted the position of Chef at Papa George’s Restaurant.
In 2009 Patrice Fortin obtained control of the restaurant he had been manager of for nearly a decade. Both Patrice and Dale share the philosophy that a successful restaurant must use local and regional ingredients.
Wild Game is just such a regional delight available to fine restaurants from several West-Central Alberta farms. Seasoned travelers already know of and appreciate world-famous Alberta beef.
An example of Chef Dale Nutt's commitment to this philosophy can be seen in the Wild Game used in the restaurant; they all come from accredited raising farms of Central Alberta.
Elsewhere in this web site you will be able to download Chef’s latest menu. You should be warned, however, that this creative and innovative chef will likely have something slightly different to offer by the time you actually sit in Papa George’s Restaurant.
