About Papa George's Restaurant

A True Canadian Experience...

From humble beginnings in the very early years of Jasper National Park, Papa George’s Restaurant is now considered to be Jasper’s best example of Fine Dining. Fine Dining evolves from successfully combining many ingredients, like a terrific chef, a comfortable, welcoming room, great management and a motivated staff. An appropriate philosophy, consistently enforced, guides all these variables. Papa George’s Restaurant exemplifies these ideals.

The view out the very large windows look across the broad valley in which Jasper is located. Glaciers, snow, bare rock and forest are in evidence everywhere.

The room itself was fully renovated in 2009 and reflects Jasper’s location in the heart of the Canadian Rockies. Wood, stone and iron tastefully combine to remind you of this unique location.

Part of the renovation was the addition of the Wine Bar with a beautiful wine cellar containing some 1,300 bottles from around the world. “Small Plate” dining is a feature of the Wine Bar as it caters to lighter meals only slightly removed from the rest of the dining room. Premium cocktails, flavoured Vodkas and exotic Martinis are also available here. Spectacularly set into a corner of the restaurant, the cellar’s collection and controlled environment is there for all to see through two walls of glass. Sommelier and Owner, Patrice Fortin will be honoured to match your meal to something in your budget either by the glass or the bottle.

Adjacent to the wine cellar is the Café which features a full Espresso Bar and fresh pastries baked daily. Pick up an Alpine Picnic lunch box to go for your hike, that includes a fresh sandwich, a drink and a pastry square.

The philosophy of Papa George’s Restaurant comes from Owner and Sommelier Patrice Fortin and Chef Dale Nutt: Operate a regional cuisine restaurant. Learn more of that on the “From Chef” page.
